Chef Jorge Mercado grew up in Vieques, where he began his culinary journey at seven, learning from his grandmother and mother.
He graduated from the Instituto de Banca and furthered his education in tourism, wine, and restaurant service, earning a Small Business Administration certification from Mayagüez University.
After an internship at Carambola with Chef Sandra, he became the breakfast cook and gained experience in local and international cuisines.
In 2020, he was awarded “Best Gourmet Cook” at Vieques Bistro and worked as a private chef.
Today, he leads the culinary team at Carambola in the Blue Horizon resort, renowned for his exceptional and innovative dishes.
Carambola at the Blue is open for breakfast from 7:30 AM to 10:30 AM, lunch from 12:00 PM to 3:00 PM, and dinner from 5:30 PM to 10:00 PM daily.
