Hello! I'm Chef Jorge

Chef Jorge Mercado grew up in the vibrant community of Vieques, where his family has lived for generations. His culinary journey began at seven, learning from his grandmother and mother, who cooked traditional meals on the beach.

Chef Jorge graduated from the Instituto de Banca in Vieques and participated in educational programs in tourism, wine, and restaurant service, earning a Small Business Administration certification from Mayagüez University.

After graduation, he started an internship at Carambola under the mentorship of Chef Sandra, a former executive chef. Following his internship, he became the breakfast cook at Carambola and gained experience in both local and international cuisines by working in various restaurants in Vieques.

In 2020, he was awarded the title of “Best Gourmet Cook” at Vieques Bistro. He also worked as a private chef, catering events for up to 150 guests, and gained valuable experience in Mexican cuisine.

Today, Chef Jorge leads the culinary team at Carambola, the premier restaurant in the Blue Horizon resort. His rich cultural heritage, extensive training, and diverse experiences make him a beloved figure in the Vieques culinary scene.
